Keto eggplant rolls with goat cheese & bacon

Goat cheese & bacon is an amazing combination! Roll them in roasted eggplant slices and you will end up with an exciting snack!

Ingredients

400 gr unpeeled eggplant(s)

2 tbsp(s) olive oil (27 gr)

8 bacon slice(s) (224 gr)

120 gr soft goat cheese - regular or vegetarian

Seasoning

salt (to taste)

ground black pepper (to taste)

Instructions

  1. Cut the eggplant(s) in about 8 thin slices
  2. Place a non-stick skillet over medium heat
  3. Brush both sides with the olive oil and season with salt & pepper (to taste) and add the eggplant slices in the skillet
  4. Roast them for about 2 minutes on each side, so that they are soft enough to roll. Set aside on a serving dish
  5. Place the skillet back to medium-high heat, add the bacon slices and cook for 2 minutes per side
  6. Place a bacon slice on each eggplant slice
  7. Cut the goat cheese into 8 pieces and set aside too
  8. Place a piece of goat cheese on each eggplant-bacon slice, close to one edge of the slice
  9. Roll the eggplant and put back in the serving dish, seam-side down
    • Repeat for all eggplant-bacon slices
