Low carb Turkish menemen / tomatoes, eggs & peppers
Menemen is a delicious traditional Turkish dish, made with tomatoes, eggs & peppers. Onions and garlic cloves are often added in the recipe. This low carb recipe skips the onions and garlic, as they would add unnecessary carbs in the recipe and they would make the dish less "attractive" for breakfast. You may optionally add feta cheese, if you eat dairy, as its taste really matches with this dish. Enjoy!

Ingredients
1 medium green pepper(s) (119 gr)
600 gr tomatoes
4 tbsp(s) olive oil (54 gr)
Seasoning
salt (to taste)
ground black pepper (to taste)
Eggs
4 large egg(s) (200 gr)
Optional
160 gr feta cheese - regular or vegetarian
Garnish
10 fresh basil leaves (5 gr)
Instructions
- Dice the peppers. Set aside
- Dice the tomatoes or blend them in a food processor. Set aside
- Place a non-stick skillet over medium heat with half of the olive oil
- Add the peppers in the skillet. Saute for a couple of minutes, until tender
- Then, add the tomatoes, the rest of the olive oil and season with salt & pepper (to taste)
- Stir and let them boil for about 10 minutes, until there is no excess liquid
- Crack in the eggs and cover the skillet with the lid or a kitchen towel
- At this stage, you may optionally add feta cheese cut into large chunks
- Let it cook for 3-4 minutes, until eggs are cooked
- Top it with some dried ground basil or chopped fresh basil leaves, when served

✔ Preferably use plum or classic tomatoes. Alternatively, you may use can crushed tomatoes
