Vegan keto roasted cauliflower

Simple... Nutritious... Healthy... And most importantly, delicious! I enjoy having this as a snack in front of TV, replacing my pro-keto diet habit of chips and popcorn. If you are not a vegan, you may spread a bit of shredded vegetarian parmesan or cheddar cheese on top and let it melt. Simplicity tastes amazing!

1 medium cauliflower head(s) (588 gr)

3 tbsp(s) olive oil (41 gr)


2 tsp(s) garlic powder (6 gr)

salt (to taste)

ground black pepper (to taste)


1 lemon(s) juiced (48 gr)


  1. Preheat the oven to 200°C / 400°F
  2. In the meantime, wash and cut the cauliflower(s) into small pieces / florets and place them in a bowl
  3. Add the olive oil and season with garlic powder, salt and pepper. Toss until fully coated
    • You may add any kind of seasoning you prefer: onion or garlic powder, chili powder, thyme, oregano, etc
  4. Arrange the cauliflower pieces in a single layer on a baking tray covered with parchment paper
  5. Bake for 20-25 minutes, until the cauliflower gets a goldish color
  6. Serve with freshly squeezed lemon juice


✔ Vegetarian alternative: instead of lemon juice, spread 1/4 cup (per serving) of shredded vegetarian cheddar cheese and let it melt: 18.6gr Fat, 9.8gr Protein, 5.35gr Net Carbs and 239 kcal per serving
