Vegan keto spinach, tomatoes & avocado salad

Have you ever tried combining spinach, tomatoes and avocado? The sweetness of baby spinach leaves, along with the sweet and sour taste of tomatoes and the oiliness of the avocado is a combination that will definitely excite you! If you are eating dairy, add a bit of crumbled feta cheese and notice the burst of flavors, as its tangy taste blends with the rest of the ingredients.

Ingredients

150 gr fresh spinach

120 gr tomatoes

1 avocado(s) (201 gr)

salt (to taste)

2 tbsp(s) olive oil (27 gr)

Instructions

  1. Wash the spinach leaves - preferably baby spinach leaves (hand-chop if larger) and place them in a salad bowl
  2. Cut tomato(es) into chunks and add them in the bowl too
  3. Wash the avocado(s) and cut in half. Remove the seed, scoop out the flesh, cut into cubes and place them in the bowl
  4. Season with salt to taste and mix
  5. Drizzle 1 tablespoon of olive oil per serving of salad and is ready to serve
  6. You may optionally garnish the salad with some crumbled feta cheese
