Vegan keto arugula & apple salad with sweet-sour dressing

So many flavors, perfectly combined in a salad! Peppery arugula is put together with the sweet taste of apples and the sour flavor of cranberries and accompanied with a sweet-sour dressing sauce. If you choose to add walnuts, a nutty flavor will be added to the dish.

Ingredients

Salad ingredients

150 gr arugula

0.25 medium green apple(s), with skin (46 gr)

1 tbsp(s) unsweetened cranberries (7 gr)

salt (to taste)

Dressing

2 tbsp(s) olive oil (27 gr)

1 tbsp(s) balsamic vinegar (16 gr)

1 tbsp(s) sugar-free maple syrup (15 gr)

ground black pepper (to taste)

Instructions

  1. Place the arugula leaves - preferably baby arugula leaves- in a salad dish or bowl
  2. Season with a bit of salt and mix
  3. Cut the apple(s) into slices or cubes and spread them in the salad (2-3 apple slices per serving)
    • You may use red or green apple
  4. Add 1/2 tablespoon of cranberries to each serving of salad
  5. Prepare the salad dressing: put the olive oil, balsamic vinegar, sugar-free maple syrup & pepper in a small jar with lid and shake to combine
    • I prefer using a mini coffee mixer
  6. Spread the dressing all over the salad
  7. Optionally, garnish each serving with some walnuts. Omit for a nut-free meal
