Vegetarian keto 3-ingredient crepes

This super easy recipe for crepes, uses 3 simple ingredients: eggs, cream cheese & heavy cream. You may fill your crepes with sweet or savory choices and prepare a delicious snack in minutes! You can also use them as tortillas :) Enjoy!

Ingredients

2 large egg(s) (100 gr)

3 tbsp(s) cream cheese (44 gr)

1 tbsp(s) heavy whipping cream, fluid (15 gr)

Greasing

1 tbsp(s) unsalted butter (14 gr)

Instructions

  1. Add the eggs in a mixing bowl, along with the cream cheese & the heavy cream*
  2. Mix with a whisker or a handheld mixer, until well combined
    • 1-2 minutes needed
    • Optionally, add a bit of vanilla extract and/or sweetener, if you are preparing sweet crepes or a bit of salt for savory crepes
  3. Grease a small non-stick pan with a bit of butter (or other fat/oil of your choice) and place over medium heat
  4. When the pan is hot, pour 2 tablespoons of batter into the pan and spread it across the pan
  5. Cook for about 1-2 minutes, until it bubbles
  6. Flip the crepe and cook for no more than 1 minute
  7. Repeat, until all the batter is finished

Notes

✔ *You may substitute the heavy cream with cream cheese at a proportion of 3:1
