Vegetarian keto pizza with almond flour

I used to know what craving for a pizza means, when on a keto diet... But not any more! This delicious low carb pizza crust is simply made with almond flour, cream cheese and shredded mozzarella. It is really tasty, very easy to prepare and gluten-free. Top it up with your favourite toppings and you have an amazing fresh-baked homemade low carb pizza!

Ingredients

Crust

1.5 cup(s) shredded mozzarella - regular or vegetarian (168 gr)

2 tbsp(s) cream cheese (29 gr)

85 gr almond flour

salt (to taste)

Crust - Optional

1 large egg(s) (50 gr)

Sauce

0.5 cup(s) marinara sauce - no added sugar (132 gr)

2 tbsp(s) olive oil (27 gr)

0.5 tsp(s) dried ground oregano (1 gr)

0.5 tsp(s) dried ground thyme (1 gr)

Cheese

1.5 cup(s) shredded mozzarella - regular or vegetarian (168 gr)

Garnish

10 fresh basil leaves (5 gr)

Instructions

Crust

  1. Preheat the oven to 180°C / 350°F
  2. Mix the mozzarella and the cream cheese in a microwave bowl or in a saucepan
  3. Melt the cheese mix: microwave for 60-90 seconds or over low heat in the saucepan
  4. Add the almond flour, egg(s)* & a dash of salt and mix them well using a spoon or a spatula, until they get a doughy texture
    • Do not do it by hand, as the melted cheeses mixture is very hot
  5. When almost ready, knead the dough by hand for one more minute
  6. Place the dough between two pieces of parchment paper and roll the dough
    • If it becomes sticky, sprinkle a bit of almond flour
    • For 6 servings roll the dough, until you get a 30cm / 12" diameter pizza crust
  7. Remove the top piece of paper and transfer the dough onto a baking or pizza tray, using the bottom piece of parchment
  8. Bake for 10-12 minutes, until lightly goldish-colored or -in order to make the crust crispy- bake one side for 8-10 minutes and then flip it and oven broil the other side for 2-3 more minutes

Assembly

  1. In a bowl, mix the marinara sauce** with the olive oil, oregano and thyme
  2. Using a spoon, spread the sauce evenly on the crust
  3. Spread the mozzarella cheese and optionally top it with thin tomato slices
  4. Bake for 3-5 minutes using the oven broiler (or for about 10 minutes in the oven), until the mozzarella has melted

Serving

  1. Using a pizza cutter or a knife, cut the pizza into 6 pieces
  2. Garnish with some fresh basil leaves and serve

Notes

✔ *If you don't want to use egg(s), add a flax egg or a tablespoon of cream cheese per egg you substitute

✔ **You may prepare your own marinara sauce. Search for our low carb recipe!

  • Add 1/2 slice of bacon (about 14gr / 0.5oz) per serving ->
