1.5 cup(s) vegetarian mozzarella cheese, shredded (168 gr)

2 tbsp(s) cream cheese (29 gr)

85 gr almond flour

salt (to taste)

Crust - Optional

1 large egg(s) (50 gr)

0.5 cup(s) marinara sauce - no added sugar (132 gr)

2 tbsp(s) olive oil (27 gr)

0.5 tsp(s) dried ground oregano (1 gr)

0.5 tsp(s) dried ground thyme (1 gr)

1.5 cup(s) vegetarian mozzarella cheese, shredded (168 gr)

10 fresh basil leaves (5 gr)

  1. Preheat the oven to 180°C / 350°F
  2. Mix the mozzarella and the cream cheese in a microwave bowl or in a saucepan
  3. Melt the cheese mix: microwave for 60-90 seconds or over low heat in the saucepan
  4. Add the almond flour, egg(s)* and a dash of salt and mix them well using a spoon or a spatula (do not do it by hand, as the melted cheeses mixture is very hot), until they get a doughy texture
  5. When almost ready, knead the dough by hand for one more minute
  6. Place the dough between two pieces of parchment paper and roll the dough. If it becomes sticky, sprinkle a bit of almond flour
  7. Remove the top piece of paper and transfer the dough onto a baking or pizza tray, using the bottom piece of parchment
  8. Bake for 10-12 minutes until lightly goldish-colored or -in order to make the crust crispy- bake one side for 8-10 minutes and then flip it and oven broil the other side for 2-3 more minutes

  1. In a bowl, mix the marinara sauce with the olive oil, oregano and thyme
  2. Using a spoon, spread the sauce evenly on the crust
  3. Spread the mozzarella cheese and optionally top it with thin tomato slices
  4. Bake for 3-5 minutes using the oven broiler (or for about 10 minutes in the oven), until the mozzarella has melted

  1. Using a pizza cutter or a knife, cut the pizza into 4 pieces
  2. Garnish with some fresh basil leaves and serve

✔ *If you don't want to use egg(s), add a flax egg or a tablespoon of cream cheese per egg you substitute

✔ For 4 servings roll the dough until you get a 30cm / 12" diameter pizza crust
