Vegetarian keto asparagus with soft eggs

This dish is one of the best choices for a keto breakfast or snack. Why? Asparagus are full of nutrients, vitamins and antioxidants and low in carbs; what's more, they are delicious! Eggs are a great source of protein and they are described as a nutritional powerhouse!

Ingredients

Main ingredients

200 gr asparagus, trimmed

2 tbsp(s) unsalted butter (28 gr)

2 large egg(s) (100 gr)

Seasoning

salt (to taste)

ground black pepper (to taste)

Garnish - Optional

10 radish slices (10 gr)

Instructions

  1. Bring a non-stick skillet of water to a boil and add the asparagus
  2. Blanch them for 1 minute, take out of the skillet and keep them on a paper towel
  3. Empty the water and put the skillet back on medium heat
  4. When skillet is completely dry, add the butter and let it melt
    • Substitute butter with olive oil, for a lactose-free option
  5. Then, add the asparagus, season with salt & pepper to (taste) and stir to coat
  6. Let them saute for 5 minutes, while stirring occasionally, until they are soft & slightly crunchy at the same time
  7. When ready, remove the asparagus to a dish
  8. Crack the egg(s) in the skillet - add salt to taste
  9. Cover the skillet and let cook for 2-3 minutes, until the egg white is set & the yolk is still runny
    • Alternatively, you may poach the egg(s), if you prefer
  10. When ready, place the egg(s) in the dish with the asparagus and season with freshly ground pepper
  11. Optionally, garnish with some radish slices
  12. You may serve on a tablespoon of cauliflower hummus or on a slice of toasted keto bread (search for our low carb recipes)
