Vegetarian keto asparagus with soft eggs

This dish is one of the best choices for a vegetarian keto breakfast or snack. Why? Asparagus are full of nutrients, vitamins and antioxidants and low in carbs; what's more, they are delicious! Eggs are a great source of protein and they are described as a nutritional powerhouse! You may also add mushrooms, which are low in carbs - high in protein, but also a powerful immune system booster!

Ingredients

Main ingredients

200 gr asparagus, trimmed

2 tbsp(s) unsalted butter (28 gr)

2 large egg(s) (100 gr)

Optional

0.5 cup(s) white mushrooms, sliced (35 gr)

Seasoning

salt (to taste)

ground black pepper (to taste)

Instructions

  1. Bring a non-stick skillet of water to a boil and add the asparagus
  2. Blanch them for 1 minute, take out of the skillet and keep them on a paper towel
  3. Empty the water and put the skillet back on medium heat
  4. In the meantime, chop the mushrooms into slices - if using them in the recipes
  5. When skillet is completely dry, add the butter and let it melt
  6. Then, add the asparagus and mushrooms. Season with salt and pepper to taste and stir to coat
  7. Let them saute for 5 minutes, while stirring occasionally, until they are both soft and slightly crunchy at the same time
  8. When ready, remove asparagus and mushrooms to a dish and crack the egg(s) in the skillet - add salt to taste
  9. Reduce heat to low, cover the skillet and let cook for 2-3 minutes, until the egg white is set and the yolk is still runny
  10. When ready, place the egg(s) in the dish with the asparagus and season with freshly ground black pepper
  11. Serve on a tablespoon of cauliflower hummus or on a slice of toasted keto bread (search for our low carb recipes)

✔ You may substitute butter with olive oil, for a lactose-free option

✔ You may poach the eggs, if you prefer

✔ If you omit the mushrooms: 18.4gr Fat, 8.5gr Protein, 2.1gr Net carbs and 211 kcal per serving
