Vegetarian keto stuffed eggs with avocado mayo dip

This keto stuffed eggs recipe uses avocado mayonnaise as source of fat and eggs as protein source. Most important, it has less than a gram of net carbs per serving. Have hard-boiled eggs in your fridge, so you can prepare this delicious snack in just a few minutes! So easy and so yummy!

5 large egg(s) (250 gr)

Avocado mayo dip

1 clove(s) of garlic (3 gr)

3 tbsp(s) avocado oil mayonnaise (39 gr)

1 tbsp(s) lemon juice (15 gr)

salt (to taste)


1 tsp(s) mustard (5 gr)


0.5 tsp(s) paprika (1 gr)



  1. Hard boil the eggs (10 minutes needed) and then cool them in a bowl with cold water
  2. [In the meantime, prepare the avocado mayo dip]
  3. Peel the eggs and cut them in half
  4. Remove the yolks with a spoon and put them in a bowl
  5. Set the egg whites aside in a dish

Avocado mayo dip

  1. Smash the garlic cloves and put them in a bowl
  2. Add the avocado mayonnaise, lemon juice, mustard (optional) & salt to taste
    • If you don't eat mustard, replace it with more avocado mayonnaise
  3. Mix well the ingredients until you have a smooth texture


  1. Mix well the egg yolks and the avocado mayo dip with a fork
  2. Using a spoon or a pastry bag, fill in the egg whites with the mix
  3. Sprinkle some paprika on the egg halves and serve
