Vegetarian keto beets & feta salad

The combination of beets with feta cheese is amazing! This salad simply combines these two ingredients with a bit of scallion & olive oil. I prefer using canned beefs to avoid the hassle of cleaning, peeling & cooking them; yet, you can certainly use fresh beets if you prefer. Enjoy!

Ingredients

1 cup(s) sliced canned beets, drained (170 gr)

150 gr feta cheese - regular or vegetarian

1.5 tbsp(s) spring onion(s) / scallion(s), chopped (9 gr)

1 tbsp(s) olive oil (14 gr)

Instructions

  1. Place the sliced beets in a serving dish
  2. Cut the feta cheese in cubes and sprinkle
  3. Thinly chop the scallion and sprinkle too
  4. Drizzle the olive oil and serve
