Vegetarian keto eggplant rolls with feta cheese

400 gr unpeeled eggplant(s)

2 tbsp(s) olive oil (27 gr)

120 gr feta cheese - regular or vegetarian


salt (to taste)

ground black pepper (to taste)


  1. Cut the eggplant(s) in about 8 thin slices
  2. Place a non-stick skillet over medium heat
  3. Brush both sides with the olive oil and season with salt & pepper (to taste) and add the eggplant slices in the skillet
  4. Roast them for about 2 minutes on each side, so that they are soft enough to roll. Set aside on a serving dish
  5. Cut the feta cheese into 8 sticks and set aside too
  6. Place a stick of feta cheese on each eggplant slice, close to one edge of the slice
  7. Roll the eggplant slice and put back in the serving dish, seam-side down
    • Repeat for all eggplant slices
