Vegetarian keto feta scrambled eggs
Enjoy a delicious & creamy twist on classic scrambled eggs with this quick and easy recipe featuring tangy feta cheese. Simply add crumbled feta cheese in the whisked eggs, and a pinch of salt & pepper. Cook the mixture over medium heat in a non-stick skillet, gently stirring until the eggs are softly set. Ingredients
1 tbsp(s) olive oil (14 gr)
4 large egg(s) (200 gr)
2 tbsp(s) heavy whipping cream (30 gr)
0.5 cup(s) crumbled feta cheese - regular or vegetarian (75 gr)
Seasoning
salt (to taste)
ground black pepper (to taste)
Instructions
- Place a non-stick skillet with the olive oil over medium heat
- Crack the eggs in a bowl, add salt & pepper (to taste), as well as 2 tablespoons of heavy cream* and whisk
- Adding heavy cream will help you achieve creamier & fluffier scrambled eggs
- Then, add half the crumbled feta cheese* and mix up
- Oil is now heated, so pour the egg - cheese mixture in the skillet
- Let it cook for 20-30 seconds, until it starts to set
- Use a rubber spatula to stir the eggs, while pausing for some seconds, so that the eggs are cooked
- Your eggs are done when they are all set and -at the same time- look slightly runny
- You will need around 2-3 minutes in total for 2 eggs
- Remove to a plate, add the rest of the crumbled feta cheese on top and serve
