Vegetarian keto green beans with browned onions

An easy to make, yet delicious, dish, with green beans, parmesan cheese and browned onions. Simply omit the cheese or replace it with a lactose-free option and instantly get a dairy-free alternative!

Ingredients

6 tbsp(s) olive oil (81 gr)

1.5 medium red onion(s) (165 gr)

500 gr green beans

Optional

180 gr shredded parmesan - regular or vegetarian

Seasoning

salt (to taste)

ground black pepper (to taste)

Instructions

  1. Place a deep ovenproof skillet over medium heat and add the olive oil
  2. Thin slice the onion(s) and add the onion slices in the skillet. Stir so that they are well covered with oil
  3. Let them cook for 10 minutes, stirring occasionally, until lightly browned. Set aside
  4. Add water in the skillet, bring to a boil and boil the green beans until crisp-tender (5 minutes)
  5. Carefully drain the hot water. Add cold water and drain once again
  6. Sprinkle the shredded parmesan cheese (optional), season with salt and pepper to taste. Stir and add the cooked onion slices on top
  7. Bake for up to 10 minutes using the oven broiler, until the onions get crispy and browned

Notes

✔ You may boil the green beans, using another skillet or pot, while cooking the onions. In this case you will end up with 10 minutes off total time

✔ If you don't have an ovenproof skillet, use a normal non-stick skillet or pot to cook the onions and boil the green beans and then transfer into a baking dish
