Vegetarian keto mozzarella & cherry tomatoes skewers

Since I found vegetarian mozzarella cheese pearls (with vegetarian rennet), I cannot stop making this snack! I find the combination of sweet - juicy cherry tomatoes with the soft - buttery texture of fresh mozzarella, irresistible... Moreover, it contains only 2.5gr of net carbs per skewer and it's high in fats and proteins.

Ingredients

8 cherry tomatoes (136 gr)

8 fresh basil leaves (4 gr)

8 mozzarella balls, vegetarian (104 gr)

Dressing

0.5 tbsp(s) balsamic vinegar (8 gr)

0.5 tbsp(s) olive oil (7 gr)

Instructions

For this recipe you will need 2 skewers

  1. Wash the cherry tomatoes and set them aside
  2. Prepare the basil leaves and set aside as well
  3. Also, prepare and set aside the vegetarian mozzarella balls
    • or cut mozzarella cheese into 8 small cubes
  4. Place the ingredients (4 pieces of each), in an alternating order, on each skewer and lay them on a dish
  5. Prepare the dressing: put the olive oil and balsamic vinegar in a small jar with lid and shake to combine
    • Or use a mini coffee mixer, if available
  6. Sprinkle the dressing around the skewers and serve
