Vegetarian keto baked parmesan zucchini fries

Baked parmesan zucchini fries are a must keto dish! You can have them as a side dish to accompany your main meal or as a snack combined with a keto sauce, like french onion dip or tomato sauce. Enjoy!

Ingredients

500 gr zucchini(s)

2.5 tbsp(s) olive oil (34 gr)

100 gr shredded parmesan - regular or vegetarian

Seasoning

salt (to taste)

ground black pepper (to taste)

Optional

0.5 tsp(s) garlic powder (2 gr)

Instructions

  1. Preheat the oven to 200°C / 400°F
  2. Wash the zucchinis, cut them into sticks and place on a towel to absorb moisture
  3. Put the oil in a bowl
  4. In a separate bowl, mix the parmesan cheese with a bit of salt & pepper (to taste), as well as a bit of garlic powder (optional)
    • Add just a dash of salt, as parmesan cheese is very salty
  5. Place the zucchinis into the bowl with the oil and toss around, until fully coated
  6. Then, place the zucchinis into the bowl with the parmesan mix and toss around again, until fully coated
  7. Arrange the zucchinis in a single layer on a baking tray covered with parchment paper
  8. Bake for about 20 minutes (depends on how thick you've cut the zucchini sticks), until golden
    • Flip halfway through
    • If needed, bake for 5 more minutes, using the oven broiler, until the sticks get golden
