Vegetarian keto roasted asparagus with crumbled feta

I used to accompany roasted asparagus with parmesan cheese, until I tried combining it with feta cheese instead and it became my favourite way of having asparagus! Garnish with a bit of balsamic vinegar for a mild acidic taste, which matches perfectly with both the distinct asparagus taste and the salty feta cheese flavor.

Ingredients

200 gr asparagus, trimmed

2 tbsp(s) olive oil (27 gr)

Seasoning

salt (to taste)

ground black pepper (to taste)

Garnish

0.5 tbsp(s) balsamic vinegar (8 gr)

100 gr feta cheese - regular or vegetarian

Instructions

  1. Preheat the oven to 200°C / 400°F or prepare your grill
  2. Add the asparagus spears and olive oil in a mixing bowl. Toss and make sure that the spears are well covered with the oil
  3. Add salt and pepper and toss again
  4. Arrange the asparagus in a single layer on a baking tray covered with parchment paper
  5. Bake for 10-12 minutes (depends on asparagus thickness), until asparagus spears are fork tender
  6. Serve on a dish and garnish with some balsamic vinegar and crumbled feta

Serving size: 100gr / 3.5oz asparagus & 50gr / 1.75oz feta cheese
