This refreshing salad is packed with healthy fats and vibrant flavors. Fresh baby spinach is tossed with cherry tomatoes, creamy avocado, and tangy feta cheese, then drizzled with a bit of extra virgin olive oil. You may optionally add a sprinkle of toasted seeds or nuts for crunchiness. Enjoy!

Ingredients

4 cup(s) fresh spinach (120 gr)

120 gr tomatoes

1 avocado(s) (201 gr)

100 gr feta cheese - regular or vegetarian

salt (to taste)

2 tbsp(s) olive oil (27 gr)

Instructions

  1. Wash the spinach leaves - preferably baby spinach leaves (hand-chop if larger) and place them in a salad bowl
  2. Cut tomato(es) into chunks and add them in the bowl too
  3. Wash the avocado(s) and cut in half. Remove the seed, scoop out the flesh, cut into slices or cubes and place in the bowl
  4. Cut the feta cheese into cubes and add in the salad
  5. Season with salt (to taste) and mix
  6. Drizzle 1 tablespoon of olive oil per serving and serve
