Vegetarian keto avocado, spinach, tomatoes & feta salad
This refreshing salad is packed with healthy fats and vibrant flavors. Fresh baby spinach is tossed with cherry tomatoes, creamy avocado, and tangy feta cheese, then drizzled with a bit of extra virgin olive oil. You may optionally add a sprinkle of toasted seeds or nuts for crunchiness. Enjoy!

Ingredients
4 cup(s) fresh spinach (120 gr)
120 gr tomatoes
1 avocado(s) (201 gr)
100 gr feta cheese - regular or vegetarian
salt (to taste)
2 tbsp(s) olive oil (27 gr)
Instructions
- Wash the spinach leaves - preferably baby spinach leaves (hand-chop if larger) and place them in a salad bowl
- Cut tomato(es) into chunks and add them in the bowl too
- Wash the avocado(s) and cut in half. Remove the seed, scoop out the flesh, cut into slices or cubes and place in the bowl
- Cut the feta cheese into cubes and add in the salad
- Season with salt (to taste) and mix
- Drizzle 1 tablespoon of olive oil per serving and serve
