Vegetarian keto tomatoes with eggs / Strapatsada
Strapatsada is a traditional Greek dish made with tomatoes and eggs. It is commonly accompanied with feta or mizithra cheese. You may have it as for breakfast or as a snack, e.g. with keto bread, or as a side dish, but you can also serve it as a main meal using a larger serving size. It's super easy to prepare and needs just a few ingredients. Enjoy!

Ingredients
600 gr tomatoes
4 tbsp(s) olive oil (54 gr)
4 large egg(s) (200 gr)
Optional
160 gr feta cheese - regular or vegetarian
Seasoning
salt (to taste)
ground black pepper (to taste)
Garnish
fresh basil leaves
Instructions
- Place a non-stick frying pan over medium heat
- Wash and dice the tomatoes or blend them in a food processor and add them in the pan
- Then, add the olive oil, season with salt & pepper (to taste) and stir
- Let them cook for about 10 minutes, until there is almost no excess liquid
- Beat the eggs in a bowl, add the feta cheese chunks (optional) and pour the mix in the pan with the tomatoes
- If you omit the feta cheese, add a bit of salt in the beaten eggs
- Stir to combine well the ingredients and cook for 2-3 minutes, until eggs are cooked, while stirring constantly
- Garnish with a few fresh basil leaves and serve warm
Notes
✔ Preferably use plum or classic tomatoes. Alternatively, you may use can crushed tomatoes
✔ If you omit feta cheese: 18.55gr Fat, 7.6gr Protein, 4.4gr Net carbs and 218 kcal per serving
✔ Serving size: 1/4 of the strapatsada prepared
