Vegetarian keto cherry tomatoes & halloumi cheese skewers

Main ingredients

8 cherry tomatoes (136 gr)

120 gr halloumi cheese - regular or vegetarian

80 gr zucchini(s)

1 tbsp(s) olive oil (14 gr)

Seasoning

salt (to taste)

0.5 tsp(s) dried ground oregano (1 gr)

Instructions

For this recipe you will need 4 skewers

  1. Preheat the oven to 200°C / 400°F or prepare your grill
  2. Wash the cherry tomatoes and set them aside
  3. Cut the halloumi cheese into 8 cubes. Set aside
  4. Wash the zucchini(s), cut into 4 thick slices and then cut each slice into half (8 halves). Set aside
  5. In each skewer add a cherry tomato, a halloumi cube, half a slice of zucchini and repeat with adding one more piece of each ingredient
    • 2 cherry tomatoes per skewer: about 35gr / 1.25oz both
    • 2 halloumi cubes per skewer: about 30gr / 1.0oz both
    • 2 zucchini half slices per skewer: about 20gr / 0.7oz
  6. Repeat for all skewers you are preparing and place them on a dish
  7. Sprinkle the olive oil on the skewers and season with salt & oregano
  8. Place the skewers on a baking tray covered with parchment paper, if your are planning to use the oven, or on your grill rack and let them bake for 10 minutes
