Vegetarian keto tomatoes & mozzarella bruschetta

I love making bruschetta!!! I simply use toasted 90 second bread and top it with ingredients that I have in hand. In this version, I topped the bread with cherry tomatoes, mozzarella balls and of course, virgin olive oil. Amazing!

Ingredients

4 slice(s) 90" bread - search for our recipe (100 gr)

8 cherry tomatoes (136 gr)

8 mozzarella balls - regular or vegetarian (104 gr)

1 tbsp(s) olive oil (14 gr)

Instructions

  1. Prepare the bread according to our "90 seconds keto bread" recipe
  2. Cut the bread into 4 slices and toast
  3. Cut the cherry tomatoes into quarters or slices and place on the bread
    • 2 cherry tomatoes per bread slice
  4. Cut the mozzarella balls into slices and place on top of the tomatoes
    • 2 mozzarella balls per bread slice
  5. Drizzle the olive oil and serve
