Ingredients

8 cherry tomatoes (136 gr)

0.5 medium red pepper(s) (60 gr)

100 gr fresh mozzarella - regular or vegetarian

8 radish slices (8 gr)

8 fresh basil leaves (4 gr)

8 stuffed green olives (60 gr)

1 tbsp(s) olive oil (14 gr)

Optional

ground black pepper (to taste)

Instructions

For this recipe you will need 4 skewers

  1. Wash the cherry tomatoes and set them aside
  2. Wash, deseed and cut the pepper(s) into 8 cubes. Set aside
  3. Prepare the radish slices & basil leaves and drain the olives. Set aside as well
  4. Cut the mozzarella cheese into 8 small cubes or use small mozzarella balls. Set aside
    • For a lactose-free alternative, replace with vegan cheese of your choice
  5. Place the ingredients (2 pieces of each), in an alternating order, on each skewer and lay them on a dish
  6. Optionally, season with some freshly ground black pepper
  7. Sprinkle some olive oil around the skewers and serve
